Director of F&B Qualifications:

  • Minimum five years experience in food and beverage leadership at a luxury hotel/resort. 
  • A four-year college degree is preferred.
  • Proven track record in motivating teams to exceed goals and deliver high-quality guest experiences.
  • Strong forecasting, budgeting, scheduling, inventory controls, and P&L analysis skills.
  • Proficient in Micros and online purchasing systems.
  • Ability to analyze turnover trends and implement corrective actions. Experienced in mentoring and developing talent.
  • Capability to manage disciplinary discussions and engage staff at all levels.
  • Collaborate with Sales and Catering leadership.
  • Willingness to work flexible hours during peak times. Must meet appearance standards.
  • Ability to thrive in a fast-paced environment and manage multiple priorities.
  • Extensive hands-on food and beverage experience across various outlets and banquets with P&L responsibilities.

 

Director of F&B Responsibilities:

  • Collaborate with the Director of Restaurants, Outlet Managers, and Executive Chef to develop menu items that reflect current trends and surpass customer expectations.
  • Champion the ALL-IN culture
  • Assess F&B team performance regularly.
  • Organize training and development for succession planning within the department.
  • Review daily inventory control sheets and compare food costs; create an action plan if off target.
  • Analyze production planning against forecasts, including banquets with daily reconciliations. Maintain expense sheets and track missing items checks.
  • Review trends of daily specials compared to production sheets and evaluate cover counts against sales goals.
  • Create an action plan if average checks drop below budget. Ensure production follows sheets and meets quantities forecasts.
  • Verify recipe compliance and manage banquet food production. Streamline coordination of F&B products for banquets.
  • Monitor service staff pick-up times and proper food storage in the kitchen.
  • Confirm sanitation standards align with local health codes and oversee kitchen waste management.
  • Ensure employee meal quality and manage banquet setups and uniforms.
  • Guarantee consistent, efficient, and courteous service to all guests.
