The Executive Chef reports to the General Manager and is responsible for the day-to-day operation of all culinary production at each dining outlet and for all special Club and private events. The Executive Chef shapes the culinary experience at the Club. The Executive Chef will work with the General Manager on the annual budget formulation and monitor, manage, and affect financial performance within the department. The Executive Chef recruits, supervises, trains, and develops all culinary staff, as well as oversees related staff scheduling. Qualified candidates will have 5-7 years of progressive culinary experience in a multi unit operations from a luxury hotel, country club or fine dining restaurant. Candidates with a culinary degree from CIA or JWA are preferred but not required.

Salary and Beneftis:

Salary Range:125,000-$150,000

10% bonus

Health, Vision 70% for employee and family

5 PTO each year

4 weeks are included in the 5 months they are closed

April through November- Club Season

Relocation Expense-$10,000

Dining Expense account

Executive Chef Responsibilities:

  • Define and shape a superior culinary experience for club members, distinguished by creative and varied menu development, high service standards, and a warm and welcoming hospitality environment.
  • Develop all menus for a la carte dining and events, leveraging culinary and industry trends, and keeping in mind the tastes and desires of the membership.
  • Develop and implement policies and procedures to enhance and measure quality; continually update written policies and procedures to reflect techniques, equipment, and terminology.
  • Schedule and facilitate periodic kitchen staff meetings to ensure correct understanding of items produced and to create a cohesive culinary team.
  • Cook and directly supervise the cooking of items that require skilled preparation. Maintain a physical presence in the kitchen, especially during times of high volume, ensuring plates leaving the kitchen are satisfactory.
  • Establish and maintain effective cost control measures for targets agreed upon for food and labor while working within the Club’s budget.
  • Coordinate and follow through with the accounting office about monthly food inventory including price changes, inventory counts, and food transfers.

Executive Chef Qualifications:

  • A professional career “track record” of achievement and leadership with relative employment stability, progression of title, and growth of responsibility.
  • Successful candidates will have the ability to expertly present a range of styles/cuisines and an in-depth knowledge of culinary and industry trends;
  • Demonstrates creativity and enthusiasm with menu development and membership culinary programs; can understand and shape dining programming that exceeds the expectations of the membership.
  • Strong knowledge of maintaining organized, efficient, safe, and properly flowing kitchens, especially with coordinating banquet production concurrent with busy a la carte and buffet service.
  • A team builder and bridge-maker with the front-of-house and culinary staff; present a level-headed, approachable, and personable disposition.
  • Sensitivity to people, especially in dealing with members, staff, and guests; demonstrates a calm demeanor in all scenarios. Must have flexibility with the ability to work effectively and communicate with all levels of the organization, including collaborating with committees on menu creation.
  • Strong communication skills with management, staff, and the membership. Communication with members and guests and personal visibility on the floor at appropriate times are important parts of the Executive Chef's responsibilities at the Club .
  • Solid financial management skills with particular strengths in inventory, labor costs, purchasing, menu engineering, internal controls, budgeting, and forecasting areas.
  • Knowledge of sanitation codes, certified in "Serve Safe" or like programs, and managing proper sanitation for all food operations.
